Here's the steps that you need to follow:

Step 1: Open iTunes and Connect your device.
Step 2: Click on Summary of your iPhone and scroll down the page.
Step 3: Now in the option category, UNCHECK on Automatically Sync when this iPhone is connected and hit Apply.

That’s it! Now the next time you connect your device, the iTunes won’t pop up automatically.
